How to Preserve Curry Leaves ?
For those of us who cant get Curry Leaves in our garden or in the near by supermarket this is the best way that I found which works to preserve them.

- Curry Leaves
Method :
- Take fresh Curry Leaves. Remove rotten ones.
- Separate leaves from stem and rinse well.
- Place a paper towel / kitchen towel on a tray and spread the leaves.
- Let it dry for 2 to 3 days.
- Store it in a airtight container / zip lock cover in room temperature.
- Use it like you do with fresh curry leaves for seasoning / tadka / talimpu

this is the way i do...its good to be shred with others...
I never get fresh curry leaves here and what i do is every time i go to a indian store i buy a lot of leaves and freeze them in a zip locker it stays fresh for ages, try this it is much better then the dried ones.

@ Happy Cook : Freezing does not work for me as I use this in seasoning and frozen curry leaves directly on to oil splutters a lot.

Hi , keeping them in the freezer will not make them splutter if you remove a few and keep them aside ready for the tadka , so I quite agree with Happy Cook but am wondering about how green they stay in the freezer , another tip I picked up off some viedo says to wash , dry totally , remove from stem and keep in a plate and keep in the fridge for 3-4 hours and then remove plate they are dry by then but still green , then transfer to an air tight container - plastic , glass or a zip lock bag and store in the fridge for ages ! Works in places like U.K and U.S.A where we can't go to Indian Stores often especially so in winter!
