Chilli Powder / Kara Podi / Kari Pudi
We make Chilli powder and Coriander powder at home and do not use the store brought Chilli powder for the Sambar or Curry that we make. Even for Dhal Sambar we use this home made Chilli powder only and the taste makes a lot of difference when we use this home made Chilli powder.
- Red Dry Chilli : 1 kg
- Dhaniya Seeds : 250 gms (4 portion of Chilli : 1 portion of Coriander Seeds)
- Channa Dhal : 100 gms
- Urad Dhal : 100 gms
- Mustard Seeds : 100 gms
- Methi Seeds : 50 gms
- Rice : 50 gms
- Cumin Seeds : 50 gms
- Black Pepper : 50 gms
- Curry Leaves : 1 bunch
- Asafotida : 1 tea spoon (optional)
- Oil : 2 table spoon
- Dry Roast all the above ingredients.
- Add 1 table spoon of oil each to Dhaniya and Chillies while Roasting them.
- Ensure that the ingredients are not browned but it should be less than golden brown in colour.
- Put them all together and make it a fine powder. If in India you can get this powdered in the flour Mill else use Coffee grinder.
- Mixer Grinder can be used to powder however it does not make a fine powder.
